Bruschetta Meets Breakfast


  • 16 grape tomatoes
  • 2 – 4 basil leaves
  • 1 clove of garlic
  • 1 tsp. of extra virgin olive oil
  • pinch of salt
  • 2 pieces of bread
  • 2 eggs
  • butter or margarine
  • shredded parmesan cheese (shave it instead for a more robust cheese taste)

Serves 2


First, wash and cut up tomatoes, basil, garlic and place in small bowl.
Next, add olive oil and salt to mixture, and mix. 
Next, cook 2 eggs ‘over medium’. Next, toast bread; then spread butter or margarine on top. Next, add egg on top of buttered toast. 
Next, add mixture on top of egg. 
Then add shredded parmesan.


1st: cook one slice of bacon per egg; crumble bacon and add to mixture.
2nd: Toast a second piece of toast to make a sandwich.
