Bruschetta Meets Breakfast
- 16 grape tomatoes
- 2 – 4 basil leaves
- 1 clove of garlic
- 1 tsp. of extra virgin olive oil
- pinch of salt
- 2 pieces of bread
- 2 eggs
- butter or margarine
- shredded parmesan cheese (shave it instead for a more robust cheese taste)
First, wash and cut up tomatoes, basil, garlic and place in small bowl. Next, add olive oil and salt to mixture, and mix. Next, cook 2 eggs ‘over medium’. Next, toast bread; then spread butter or margarine on top. Next, add egg on top of buttered toast. Next, add mixture on top of egg. Then add shredded parmesan.
1st: cook one slice of bacon per egg; crumble bacon and add to mixture. 2nd: Toast a second piece of toast to make a sandwich.
