Peach & Tomato Salad


  • 3 Peaches
  • 3 Tomatoes
  • 3 – 5 Basil leaves
  • 6 – 8 Mint leaves
  • ½ Tbsp. Salt
  • 1 Tbsp. Balsamic vinegar
  • 2 Tbsp. Extra virgin olive oil
  • 8” Whole wheat French bread

Serves 4


Cut up peaches and tomatoes and place in bowl.  Let sit for a few minutes, then drain excess liquid from bowl.  Season mixture with salt, then add vinegar and extra virgin olive oil, then stir. Tear French bread into bite-size pieces and place into oven on low broil for a few minutes, until slightly browned. Garnish mixture with the French bread, mint, and basil.

    I never would have thought to combine peaches with all of this! It reminds me of a caprese salad but with peaches in place of the mozzarella. This may accompany my Labor Day picinic.
