Peach & Tomato Salad

Ingredients: 3 Peaches 3 Tomatoes 3 – 5 Basil leaves 6 – 8 Mint leaves ½ Tbsp. Salt 1 Tbsp. Balsamic vinegar 2 Tbsp. Extra virgin olive oil 8” Whole wheat French bread Serves 4 Directions: Cut up peaches and tomatoes and place in bowl.  Let sit for a few minutes, then drain excess liquid from bowl.  Season mixture with salt, then add vinegar and extra virgin olive oil, then stir. Tear French bread into bite-size pieces and place into oven on low broil for a few minutes, until slightly browned. Garnish mixture with the French bread, mint, and basil. Enjoy. Optional: 1 Radish, shaved

Roasted Red Pepper Dip

Ingredients: 2 Red Bell Peppers 2 Garlic Cloves 3 Basil Leaves 2 Tbsp. Pine Nuts 1 ½ Tbsp. Extra Virgin Olive Oil 1 Tbsp. Parmesan Cheese Pinch of Salt Pinch of Pepper Serves 6 – 8 Directions: Wash and wrap peppers in 2 layers of aluminum foil, completely sealing them with no gaps. Using a gas stove, grill red bell peppers on medium for 20 minutes, turning them a quarter of the way every 4 – 5 minutes. After the 20 minute mark has reached, squeeze them gently with tongs; if they give easily, they’re ready; if they’re a bit firm, continue to cook, rotate, & frequently check them until they become soft. Melon with Prosciutto Appetizer

Ingredients: Cantaloupe melon Wafer thin sliced prosciutto Toothpicks/small appetizer forks Directions: Wash melon, cut in half, clean out seeds, and scoop out remaining melon with a melon baller. Typically need to cut prosciutto in half and fold over a time or two to get a small size to go with size of melon ball (or wrap prosciutto around melon). Insert toothpick or fork to secure in place. Ingredients: 10 slices apple smoked bacon chopped 1 medium white onion chopped 2 to 3 cloves garlic, minced 1/2-1 cup beef stock 2 lbs Brussels sprout ends trimmed and sliced in half Salt Fresh ground pepper Directions: On medium high heat, brown bacon in 12-inch skillet until it’s brown and crispy. Take the bacon out with slotted spoon and put onto a plate covered with a paper towel. Place the onions into the pan with bacon grease and salt generously. Ingredients: Ice Few sprigs of mint Vodka Fresh squeezed lemonade Serves 1 Directions: Add 2 or 3 mint leaves and muddle. Add ice, shot of vodka; pour in lemonade to fill glass, and garnish with another mint leaf or two.

My 10 Favorite Hostess Gifts for Summer

Jen’s Stuffed Date Appetizer

Ingredients: 36 Pitted Dates 4 oz. Blue Cheese or Feta Cheese 12 Slices of Bacon then cut into 1/3 36 Whole Almonds (salted and roasted) 1 stick Chorizo (cooked and drained on paper towel) 36 toothpicks Serves 12 – 18 Directions: Cut a slit down half of the Date Then stuff Date with Cheese, Chorizo, and Almond Then close Date and wrap with Bacon piece; secure to Date using toothpick Place stuffed Dates on a cookie sheet that has been lined with foil and sprayed with non-stick spray Pop in a 350 degree oven for 20 – 25 minutes or until bacon cooked to your preference Optional: Remove Almonds and/or serve them on side
