Peach & Tomato Salad

Ingredients: 3 Peaches 3 Tomatoes 3 – 5 Basil leaves 6 – 8 Mint leaves ½ Tbsp. Salt 1 Tbsp. Balsamic vinegar 2 Tbsp. Extra virgin olive oil 8” Whole wheat French bread Serves 4 Directions: Cut up peaches and tomatoes and place in bowl.  Let sit for a few minutes, then drain excess liquid from bowl.  Season mixture with salt, then add vinegar and extra virgin olive oil, then stir. Tear French bread into bite-size pieces and place into oven on low broil for a few minutes, until slightly browned. Garnish mixture with the French bread, mint, and basil. Enjoy. Ingredients: 2 Red Bell Peppers 2 Garlic Cloves 3 Basil Leaves 2 Tbsp. Pine Nuts 1 ½ Tbsp. Extra Virgin Olive Oil 1 Tbsp. Ingredients: Ice Few sprigs of mint Vodka Fresh squeezed lemonade Serves 1 Directions: Add 2 or 3 mint leaves and muddle. Add ice, shot of vodka; pour in lemonade to fill glass, and garnish with another mint leaf or two.

Jen’s Stuffed Date Appetizer

Ingredients: 36 Pitted Dates 4 oz. Blue Cheese or Feta Cheese 12 Slices of Bacon then cut into 1/3 36 Whole Almonds (salted and roasted) 1 stick Chorizo (cooked and drained on paper towel) 36 toothpicks Serves 12 – 18 Directions: Cut a slit down half of the Date Then stuff Date with Cheese, Chorizo, and Almond Then close Date and wrap with Bacon piece; secure to Date using toothpick Place stuffed Dates on a cookie sheet that has been lined with foil and sprayed with non-stick spray Pop in a 350 degree oven for 20 – 25 minutes or until bacon cooked to your preference Optional: Remove Almonds and/or serve them on side

Summer Broccoli Salad

Ingredients: 2 heads of broccoli 1 cup of red onions 2 cups of chunky shredded cheddar cheese ¼ cup of sugar 1 cup of mayonnaise 1 tbsp. red wine vinegar 2 tbsp. milk ½ cup of cooked bacon bits Serves 4 – 6
 Directions: In large bowl first mix together sugar, mayonnaise, vinegar,
and milk.
Next add chopped broccoli, chopped onion, and cheese.
Then sprinkle the bacon on before serving. Serve in a large bowl or individual bowls. Serving Options:
 Make the night before and refrigerate until serving. This allows dressing to marinate into salad.

Ingredients: 6 – 8 cups green beans2 tbsp olive oil 1 tsp sea salt 1 tsp fresh ground pepper 2 tsp minced garlic ¼ cup sliced almonds ¼ cup parmesan cheese Serves 4 – 6 Directions: Place olive oil in a pot. Next, add green beans and stir to get beans coated. Next, add salt, pepper, garlic, and almonds; then stir. Next, cover pot and cook over medium heat until beans are
tender; approximately 15 minutes. Next, transfer from pot to a serving dish. Then stir in parmesan cheese just before serving.
