Peach & Tomato Salad

Ingredients: 3 Peaches 3 Tomatoes 3 – 5 Basil leaves 6 – 8 Mint leaves ½ Tbsp. Salt 1 Tbsp. Balsamic vinegar 2 Tbsp. Extra virgin olive oil 8” Whole wheat French bread Serves 4 Directions: Cut up peaches and tomatoes and place in bowl.  Let sit for a few minutes, then drain excess liquid from bowl.  Season mixture with salt, then add vinegar and extra virgin olive oil, then stir. Tear French bread into bite-size pieces and place into oven on low broil for a few minutes, until slightly browned. Garnish mixture with the French bread, mint, and basil. Enjoy. Optional: 1 Radish, shaved

Ingredients: 10 slices apple smoked bacon chopped 1 medium white onion chopped 2 to 3 cloves garlic, minced 1/2-1 cup beef stock 2 lbs Brussels sprout ends trimmed and sliced in half Salt Fresh ground pepper Directions: On medium high heat, brown bacon in 12-inch skillet until it’s brown and crispy. Take the bacon out with slotted spoon and put onto a plate covered with a paper towel. Place the onions into the pan with bacon grease and salt generously. Ingredients: Ice Few sprigs of mint Vodka Fresh squeezed lemonade Serves 1 Directions: Add 2 or 3 mint leaves and muddle. Add ice, shot of vodka; pour in lemonade to fill glass, and garnish with another mint leaf or two.

Jen’s Stuffed Date Appetizer

Ingredients: 36 Pitted Dates 4 oz. Blue Cheese or Feta Cheese 12 Slices of Bacon then cut into 1/3 36 Whole Almonds (salted and roasted) 1 stick Chorizo (cooked and drained on paper towel) 36 toothpicks Serves 12 – 18 Directions: Cut a slit down half of the Date Then stuff Date with Cheese, Chorizo, and Almond Then close Date and wrap with Bacon piece; secure to Date using toothpick Place stuffed Dates on a cookie sheet that has been lined with foil and sprayed with non-stick spray Pop in a 350 degree oven for 20 – 25 minutes or until bacon cooked to your preference Optional: Remove Almonds and/or serve them on side

Tuna Mixed Up Appetizer/Lunch

Ingredients: 24 pieces of sliced French or Baguette bread 5 oz. can of tuna in olive oil (I HIGHLY recommend Genoa Tonno Yellow fin tuna!!!) 2½ cups chopped up tomatoes 1 cup of chopped up sweet onion 1 tsp. sea salt 2 garlic cloves (this is optional, but me & my family prefer it) 4 tbsp. of extra virgin olive oil Serves 4 Directions:
 First, chop up the onion, garlic, and tomatoes and add into serving bowl. Next, open tuna and add all contents into serving bowl. Next, add olive oil and salt; mix together. Then add a spoonful to a piece of the sliced bread; enjoy! Serving Options:

Billy’s Bleu Cheese Dressing

Ingredients: 4 oz. bleu cheese 1 cup of sour cream ¼ cup of buttermilk ½ tsp. Worcestershire sauce ¼ tsp. garlic salt Directions:
 Add all ingredients into small blender/food processor & mix
together Serving Options: My favorite uses are with wings, celery, triscuit crackers, and over a salad

Ingredients: 2 heads of broccoli 1 cup of red onions 2 cups of chunky shredded cheddar cheese ¼ cup of sugar 1 cup of mayonnaise 1 tbsp. red wine vinegar 2 tbsp. milk ½ cup of cooked bacon bits Serves 4 – 6
 Directions: In large bowl first mix together sugar, mayonnaise, vinegar,
and milk.
Next add chopped broccoli, chopped onion, and cheese.
Then sprinkle the bacon on before serving. Serve in a large bowl or individual bowls. Serving Options:
 Make the night before and refrigerate until serving. This allows dressing to marinate into salad.
