I like my cookbooks to have meaning, and I like to actually be able to make the recipes in them, so my collection is probably just fewer than 40 books.  Lately most the cookbooks I have purchased as book published by friends, it is so special to make recipes that I know they have put their hearts and souls into. Krayl’s Perfect Mint Julep

Ingredients: 3 ounces Kentucky bourbon 1 ounce mint simple syrup 2-3 cups chipped ice Mint sprig   Serves 1 (based on cup volume)   Directions: Fill silver mint julep cup with chipped ice, top with bourbon, and mint simple syrup. Add mint sprig for garnish and serve immediately.   Suggestions: Be sure to serve with food as it is a strong beverage. She suggests Zesty Pimento Cheese or Bourbon Bacon Deviled Eggs.

Brunch Salad

Ingredients (Salad): 1 Orange 2 handfuls of arugula 1 small box of raisins   Ingredients (Dressing): 4 Tbsp. Extra Virgin Olive Oil 2 Tbsp. White Balsamic Vinegar 1 Tbsp. 100% Maple Syrup Pinch of Salt   Directions: Place 2 handfuls of arugula on plate. Peel and slice orange and place slices on top of arugula. Top off salad with the raisins. In cup or small bowl mix dressing ingredients, then pour over salad just before serving. Enjoy.   Optional: Shaved almonds. Substitute 2 handfuls of arugula with 2 handfuls of ceasar lettuce.

Brunch.  Just the word excites me and probably does the same for you, right?  Brunch, when mentioned doesn’t mean cold cereal for breakfast and a ham sandwich for lunch.  Brunch is so much more including: the food selection, location of where the meal will be, the drink that will accompany the selection of foods, the time to have this entire meal ready by, and then who will be lucky enough to share this meal. White Sangria with Vanilla

Ingredients: 1 bottle of White Wine (Chardonnay or Sauvignon Blanc) 1 Tbsp. Rodelle Vanilla Extract 6 Tbsp. Sugar 1 Large Peach 1 Large Pear 24 Green Seedless Grapes 1 Mandarin   Serves 2 – 4   Directions: Cut up peach, pear, and grapes into bit size pieces and place into pitcher. In separate bowl mix together sugar, juice of mandarin, and vanilla until blended together. Add sugar mixture and wine into a pitcher then stir and refrigerate for 12 - 24 hours. Pour sangria over ice and enjoy.   Optional: Add 1 cup of tonic water before serving if you like your drink a bit fizzy. ...

Warm Bananas

Ingredients: 2 Bananas 2 Tbsp. of Coconut Oil Serves 2   Directions: Peel and slice bananas into thick slices. Heat skillet on medium/high then add coconut oil; heat for around 2 minutes. Add banana slices and cook for 1- 2 minutes per side and remove. Enjoy.   Optional: Drizzle melted dark chocolate or shaved coconut or your favorite crushed nut on top. Add bananas on top of a cake or waffles.

Opposite’s Attract

Ingredients: Guinness beer Prosecco wine Serves 2   Directions: Pour Prosecco in a glass. Add between ¼ to a ½ a glass of Guinness and fill remaining glass with Prosecco.   Optional: Add strawberries, dark chocolate, and/or shortbread cookies.  

Candy Cane Tea

Ingredients: 6 Large Candy Canes 1 Tea pot of water   Serves 4   Directions: In a small blender/food processor chop up candy canes, as close to a powder mixture as possible. Heat up water in a tea pot. Place a tablespoonful of candy cane powder in mug, add  hot water, mix, and enjoy.   Optional: Garnish with an additional candy cane or a mint leaf. Make additional candy cane mixture and place in air tight containers to give as gifts or favors.  

Pesto & Sausage Pizza

Ingredients: 1 Pre made pizza crust 1 Tbsp. Extra virgin olive oil (if pesto mixture already has a lot of oil, skip this step) Pesto mixture Mozzarella cheese Italian sausage Serves 4   Directions: Crumble up sausage, fully cook in skillet, and drain. Lay out pizza crust, spread oil evenly around, and then apply pesto mixture evenly. Next, add a layer of the cheese and sprinkle on cooked sausage. Set oven temperature and baking time according to pizza crust package. Enjoy.   Optional: Garnish with chopped fresh basil once out of oven. Sprinkle garlic salt on crust before baking.
