Peach & Tomato Salad

Ingredients: 3 Peaches 3 Tomatoes 3 – 5 Basil leaves 6 – 8 Mint leaves ½ Tbsp. Salt 1 Tbsp. Balsamic vinegar 2 Tbsp. Extra virgin olive oil 8” Whole wheat French bread Serves 4 Directions: Cut up peaches and tomatoes and place in bowl.  Let sit for a few minutes, then drain excess liquid from bowl.  Season mixture with salt, then add vinegar and extra virgin olive oil, then stir. Tear French bread into bite-size pieces and place into oven on low broil for a few minutes, until slightly browned. Garnish mixture with the French bread, mint, and basil. Enjoy. Optional: 1 Radish, shaved

Summer Broccoli Salad

Ingredients: 2 heads of broccoli 1 cup of red onions 2 cups of chunky shredded cheddar cheese ¼ cup of sugar 1 cup of mayonnaise 1 tbsp. red wine vinegar 2 tbsp. milk ½ cup of cooked bacon bits Serves 4 – 6
 Directions: In large bowl first mix together sugar, mayonnaise, vinegar,
and milk.
Next add chopped broccoli, chopped onion, and cheese.
Then sprinkle the bacon on before serving. Serve in a large bowl or individual bowls. Serving Options:
 Make the night before and refrigerate until serving. This allows dressing to marinate into salad.
