Jen’s Stuffed Date Appetizer

Ingredients: 36 Pitted Dates 4 oz. Blue Cheese or Feta Cheese 12 Slices of Bacon then cut into 1/3 36 Whole Almonds (salted and roasted) 1 stick Chorizo (cooked and drained on paper towel) 36 toothpicks Serves 12 – 18 Directions: Cut a slit down half of the Date Then stuff Date with Cheese, Chorizo, and Almond Then close Date and wrap with Bacon piece; secure to Date using toothpick Place stuffed Dates on a cookie sheet that has been lined with foil and sprayed with non-stick spray Pop in a 350 degree oven for 20 – 25 minutes or until bacon cooked to your preference Optional: Remove Almonds and/or serve them on side

Tuna Mixed Up Appetizer/Lunch

Ingredients: 24 pieces of sliced French or Baguette bread 5 oz. can of tuna in olive oil (I HIGHLY recommend Genoa Tonno Yellow fin tuna!!!) 2½ cups chopped up tomatoes 1 cup of chopped up sweet onion 1 tsp. sea salt 2 garlic cloves (this is optional, but me & my family prefer it) 4 tbsp. of extra virgin olive oil Serves 4 Directions:
 First, chop up the onion, garlic, and tomatoes and add into serving bowl. Next, open tuna and add all contents into serving bowl. Next, add olive oil and salt; mix together. Then add a spoonful to a piece of the sliced bread; enjoy! Serving Options:

Billy’s Bleu Cheese Dressing

Ingredients: 4 oz. bleu cheese 1 cup of sour cream ¼ cup of buttermilk ½ tsp. Worcestershire sauce ¼ tsp. garlic salt Directions:
 Add all ingredients into small blender/food processor & mix
together Serving Options: My favorite uses are with wings, celery, triscuit crackers, and over a salad

Asparagus with Vinegar

Ingredients: 2 bunches of asparagus 1 cup parsley chopped 2 tbsp. oregano chopped 2 tbsp. garlic chopped ¾ cup red wine vinegar ¾ cup extra virgin olive oil dash of salt and pepper to taste Serves 6-8 Directions: In a small bowl, first mix together the garlic, oregano, parsley, vinegar, and extra virgin olive oil and set aside. Next, cut off the ends of the asparagus. Next, in sauce pan boil water and then cook asparagus for 3 minutes. Jimmy Luv’s Sloppy Joes

Ingredients: 2 lbs. ground beef 1 ½ cup Jimmy Luv’s Bloody Mary Mix 1 teaspoon kosher salt 
¼ teaspoon pepper 4 tablespoons brown sugar 
½ cup tomato sauce 
1 tablespoon minced Jalapeno Pepper (from jar is fine) Serves 4 Directions: Brown ground beef and drain fat. Stir in all ingredients.
Let simmer uncovered for ½ hour or until sauce reaches
desired thickness.
Serve on rolls. Optional: To enjoy while cooking, mix one Bloody Mary using instructions on your bottle of Jimmy Luv’s.

Tropical Banana Smoothie

Ingredients: 3 Bananas 2 Cups of pineapple coconut juice 1 Cups of ice 1 8 oz./or 1 container of vanilla yogurt 1 8 oz. container of diced pineapple or 1 Cup of fresh pineapple Serves 4 Directions: Place all ingredients in blender and blend until smooth. If smaller blender, place only ½ of the ingredients in at a time. Garnish with fresh pineapple slices. Optional: Add 2 Tbsp. of flax seeds Instead of yogurt from refrigerator, use frozen yogurt
